Scots pine flavoured Madagascar single origin dark chocolate
Flavour Madagascan cocoa beans create wonderful bright fruity chocolates, often quite pale in colour. We create the pine flavour by infusing young spring pine shoots, capturing fresh spring sap flavours rather than heavy resinous ones. Eating this chocolate is like being in a pine wood on a clear bright spring morning.
Ingredients Cocoa solids 66% minimum: cocoa mass, cocoa butter, sugar, emulsifier: SOYA lecithin, natural vanilla; flavoured with Scots pine shoots. May contain pollen.
Smoked Sea salt and Java milk chocolate
Flavour Java single origin milk chocolate is characteristically pale in colour and rich in flavour. Lots of caramel and cream. The smoked salt works beautifully with this chocolate; the salt cutting the sweetness, and then enhancing the natural flavours of the chocolate. The smokiness is in the background and adds depth to the flavours.
Meadowsweet flavoured single origin white chocolate
Flavour We are making our own white chocolate for this product, using undeodorised cocoa butter from Madagascar. The chocolate has high levels of cocoa butter, which means less sugar and the cocoa butter retains natural flavour from the bean. We infuse meadowsweet flowers, picked on the south shore of Loch Tay, to flavour this chocolate. Meadowsweet has a range of flavours - from bitter almond to a delicate liquorice.
Elderflower flavoured single origin white chocolate
Flavour The white chocolate that we use is made by a company called Luker, based in Colombia. They use undeodorised cocoa butter from fine cacao beans for this chocolate, and the chocolate has high levels of cocoa butter, which means less sugar and the cocoa butter retains natural flavour from the bean. We infuse summer elderflowers, picked on the south shore of Loch Tay, and the delicate flavour of the flowers works beautiful with the delicate floral notes in the chocolate.
